Assistant Professor of Enology & Extension Specialist
Demi has a strong interdisciplinary background spanning chemistry, sensory science, and food science. She holds a Ph.D. in Food Science and Technology from Cornell University, where her research focused on optimizing deodorization processes in native Vitis labruscana grape juices to improve their enological potential. With prior roles in academia, extension, and the wine industry, Demi brings a unique integration of hands-on cellar and vineyard experience with advanced analytical and sensory evaluation techniques. Her work has been recognized through numerous scholarships and awards, including multiple honors from the American Society for Enology and Viticulture. She continues to bridge research and practice by collaborating with grape growers and winemakers to develop science-based solutions for quality improvement in Virginia wine production.
